Corn Relish is an moderately easy dinner. Made with 7 large ears sweet corn, 4 green peppers, finely chopped (about 2 c.), 4 red peppers, finely chopped (about 2 c.), 1 tsp. ground turmeric and 2 large onions, finely chopped (about 2 c.), this recipe delivers authentic, satisfying flavors. Use large saucepan (8 quarts).

Cut corn from cobs, scraping the ears, making about 4 cups.

Mix corn with the chopped vegetables.

Place all vegetables in large pan and add all remaining ingredients.

Bring to a boil and simmer the relish over low heat, stirring occasionally, until fairly thick, about 30 minutes.

Process in boiling water bath for 10 minutes.

Yields 6 1/2 pints.
