Corn Relish
Corn Relish is an moderately easy dinner. Made with 1/2 c. water, 1/2 c. distilled white vinegar, 1/4 c. sugar, 1 tbsp. noniodized salt and 1 tsp. turmeric, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine water, vinegar, all the spices and sugar in 3-quart heavy saucepan.
Stir frequently with a wooden spoon, bringing mixture to a heavy boil.
Add red pepper, celery and onion to this mixture and lastly add the corn.
Return to boil stage.
Cook, uncovered, for 5 minutes.
Pack in prepared and sterilized glass jars, sealing tightly.
Store in refrigerator.
Makes 1 quart.
