Corn Relish
Corn Relish is an moderately easy dinner. Made with 1/2 c. white vinegar, 1/4 c. corn oil, 1/4 c. light corn syrup, 1/4 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large bowl, stir together corn oil, corn syrup, salt and pepper.
Add corn, green and red peppers, onion and parsley.
Toss to coat well.
Cover; refrigerate several hours or overnight.
If desired, drain before serving.
