Corn Relish
Corn Relish is an moderately easy dinner. Made with 1 c. vinegar, 1/2 c. sugar, 1 1/2 tsp. mustard seed, 1/2 tsp. salt and 3 1/2 c. cooked fresh corn, cut from the cob, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine vinegar, sugar, mustard and salt in a Dutch oven;
2 minutes, stirring to dissolve sugar.
Add remaining ingredients sugar mixture, and boil 3 minutes. Cool. Store in refrigerator in an airtight container.
Yields 3 1/2 to 4 cups.
