Corn Relish
Corn Relish is an impressive dinner. Made with 2 qt. cut corn (about 18 ears), 1 qt. chopped cabbage (about 1 small head), 1 c. chopped onion, 1 c. chopped sweet green peppers and 1 c. chopped sweet red peppers, this recipe delivers authentic, satisfying flavors. Boil corn for 5 minutes.
Cut from cob.
Combine with remaining ingredients in a large saucepot.
Bring to a boil.
Reduce heat and simmer 20 minutes.
Pack hot into hot jars, leaving 1/4-inch head space.
Adjust caps.
Process for 15 minutes in boiling water bath. Yields about 6 pints.
