Corn Quiche
Corn Quiche is an moderately easy dinner. Made with 2 eggs, 1 1/2 cups sour cream, 1 10 oz. package frozen corn, 1/2 cup bread crumbs and 1 4 oz. can chopped green chilies, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut monterey jack cheese into cubes.
Combine eggs and sour creme in a large bowl.
Add corn, bread crumbs, green chillies, salt and pepper.
Mix well.
Stir in monterey jack cheese cubes. Spoon into a greased 10 inch quiche pan or a square baking pan Bake at 350 or until a knife inserted in center comes out clean Sprinkle with cheddar cheese.
Bake 5 or 10 minutes longer.
Cool for 10 minutes before serving.
