Corn Fritters is an easy dinner. Made with 2 eggs, separated, 1 tbsp. sugar, 2 c. grated fresh corn or 16 oz. can whole kernel corn, drained, 8 tbsp. flour and 1 tbsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat egg yolks and add flour, one teaspoon salt and a little pepper.
Add corn and fold in the stiffly beaten egg whites.
