Corn Chowder
Corn Chowder is an moderately easy dinner. Made with 1 c. chopped onion, 1/2 c. chopped celery, 2 tbsp. butter or margarine, melted, 3 c. fresh corn, cut from cob and 1 1/2 c. peeled, cubed potatoes, this recipe delivers authentic, satisfying flavors. Saute onion and celery in butter in a large saucepan until tender.
Stir in corn, potatoes, water, bouillon cubes, salt, pepper and thyme.
Cover and simmer 15 minutes. Add milk and half and half.
Cook, stirring constantly, until thoroughly heated. Yields 8 cups.
