Corn Chowder is an moderately easy dinner. Made with 6 potatoes, peeled and diced, 1 large or 2 medium onions, diced, 2 to 3 tbsp. butter, 3 qt. milk and 1 can cream corn, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook potatoes in salted water until done.

Saute diced onion in butter until golden brown.

When potatoes are cooked, drain off water and add milk, sauteed onions and butter they were sauteed in, cream corn, whole kernel corn, salt and pepper.

Cook until hot.

This keeps well and improves as it ripens.

Serve with oyster crackers.
