Corn Chowder is an moderately easy dinner. Made with 6 slices bacon, diced, 1/2 c. chopped onion, 2 (1 lb.) cans cream-style corn, 1 (12 oz.) can whole kernel corn and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute the bacon in a saucepan until crisp; drain on paper toweling.

Add onion to 3 tablespoons of the bacon drippings. Saute until the onion is tender, then add corn, pepper, salt, milk and cream.

Simmer (do not boil) for 15 minutes.

Crumble bacon into soup.

Serve very hot.

Garnish with popcorn, if you wish. Yields about 2 1/2 quarts.
