Corn Chowder
Corn Chowder is an moderately easy dinner. Made with 2 c. potatoes, peeled and diced, 1/2 c. red onion, chopped, 1 (15 oz.) can whole kernel corn, 1/8 tsp. ground cayenne pepper and 1/2 c. diced celery, this recipe delivers authentic, satisfying flavors. Put potatoes, celery and onion in a large pot and cover with water.
Bring to a boil over medium heat, then reduce heat and simmer for about 20 minutes or until potatoes are fork-tender. Drain off water.
Add creamed corn, corn, evaporated milk, cayenne pepper, and salt, and simmer over low heat for 25 minutes.
