Corn Chowder
Corn Chowder is an moderately easy dinner. Made with 4 slices bacon, cooked and crumbled, 1 c. onion, chopped, 2 c. potatoes, pared and diced, 2 1/2 c. water, divided and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook bacon until crisp.
Remove bacon and set aside.
Saute onions in bacon fat until soft.
Add potatoes, 2 cups water, salt and pepper.
Cover and simmer 15 minutes or until tender.
Stir in corn with liquid and milk.
Blend flour with remaining 1/2 cup water until smooth, then stir into chowder.
Cook, stirring constantly, over medium heat until it thickens and heats thoroughly.
Serve sprinkled with bacon and paprika.
Serve 4 to 6.
Freezes well.
