Corn Casserole
Corn Casserole is an easy dinner. Made with 1 lb. bacon, diced, 2 c. bread crumbs, 1/4 c. minced onion, 2 (16.5 oz. each) cans cream-style corn and 1/4 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In skillet, fry bacon until crispy.
Remove and set aside. Pour 1/8 to 1/4 cup bacon drippings over bread crumbs; set aside. Discard all but 2 tablespoons of remaining drippings; saute onions and green peppers until tender.
Stir in corn and bacon.
Spoon into a 1 quart baking dish; sprinkle with crumbs.
Bake at 350Β° for 20 to 25 minutes or until heated through.
