Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 7 1/2 oz. box martha white or jiffy instant corn muffin mix, 1 egg, 1/2 stick melted butter, 1 can creamed corn and 1 can niblets corn, drained, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix together creamed and Niblets corn, 1/2 box muffin mix, egg, sour cream and melted butter.
Stir well and place in 9 x 14-inch Pyrex dish.
Mix Cheddar cheese and crushed Ritz crackers together and sprinkle on top of casserole.
Bake at 325Β° for 30 to 40 minutes.
