Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 1 large onion, chopped, 1/2 c. margarine, 1 can whole kernel corn, 1 can creamed corn and 1/2 pt. sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onion and pepper in margarine.
Mix in a large bowl the eggs, creamed corn, whole corn with juice, corn bread mix, sauteed vegetables and salt.
Pour into a 9 x 13-inch creased casserole. Spoon sour cream on top in small dollops.
Just before baking, cover with cheese.
Bake 30 minutes at 400Β°.
