Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 1 medium onion, chopped, 1 bell pepper, chopped, 1/2 c. butter, 2 c. cooked rice and 1 (16 oz.) can whole tomatoes, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown onion and bell pepper in butter.
Cook rice.
Place all ingredients except cheese in a 3-quart saucepan; mix well.
Cook on top of stove over low heat 1 hour.
Pour into greased 9 x 13-inch baking dish.
Top with cheese.
Bake at 325Β° for 15 minutes.
