Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 2 (16 oz.) cans cream-style corn, 1/2 c. yellow cornmeal, 1/3 c. milk, 2 eggs, beaten and 6 tbsp. vegetable oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large bowl, beat the eggs, then add the milk, corn, oil, pimentos, onion, jalapeño, salt, garlic and cornmeal.
Mix until well blended.
Pour into a lightly greased 1 1/2-quart casserole. Bake for 1 hour or until set at 350°.
On removal from oven, sprinkle with 2 cups grated cheese.
