Corn Casserole is an moderately easy dinner. Made with 1 stick butter, 1 can corn (undrained), 1 can creamed corn, 2 eggs, slightly beaten and 1 small box jiffy corn muffin mix, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Soak and cook beans.

Drain and mash in mixer (be careful not to liquify them!).

Spoon into skillet and add pinto bean seasoning or garlic and onion flavorings and "fry" until a thick consistency is reached.

These may be used to fill tortillas along with picante sauce and some (slight) cheese.

These may also be used in tacos or chalupas (flat tacos).

These will freeze fine and defrost in the microwave.

Made this way you avoid the lard often used in store bought refried beans.
