Coriander Rosti
Coriander Rosti is an easy dinner. Made with 3 lb. baking potatoes, 2 onions, 1 1/2 oz. butter, 1 tbsp. coriander and salt and pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Pierce potatoes with a fork and bake at 400° for 40 minutes, or until softened, but not cooked through.
Peel and finely chop onions until soft without browning (5 to 7 minutes).
When potatoes are cool, peel and grate coarsely.
Add cooked onions and seasonings.
Spoon mixture into 16 rough mounds on a greased baking sheet.
Bake at 400° for 40 minutes, or until crisp and golden.
