Cordon Bleu
Cordon Bleu is an moderately easy dinner. Made with 4 boneless, skinless chicken breasts, quality ham, thinly sliced, swiss cheese, thinly sliced, 2 c. bread crumbs and 2 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Pound chicken flat.
Layer ham and cheese on each chicken piece; roll into logs.
Tuck ends.
Mix eggs and milk together; dip chicken into milk mixture.
Roll in flour, dip in milk again and roll in bread crumbs.
Chicken should now be secured (you may need more flour and bread crumbs).
Fry on medium heat in about 1 inch of oil on all sides until golden brown.
Place on a cookie sheet; bake in oven for about 20 minutes, or until cheese is oozing out of the ends.
Top with white sauce; sprinkle with fresh chopped parsley.
Serve on a platter of wild rice.
