Cooked Pimento Cheese
Cooked Pimento Cheese is an moderately easy dinner. Made with 1 lb. sharp cheddar cheese, shredded (kraft), 2 eggs, separated, 1 tsp. prepared mustard, 2 tbsp. milk and 5 to 6 tbsp. sugar or to taste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
To make sauce, blend together beaten egg yolks, sugar, mustard, butter, vinegar and milk.
Heat, stirring until smooth and hot; stir hot mixture into shredded cheese, stirring until well mixed.
Drain pimentos and dice (reserve liquid).
Add diced pimentos to cheese mixture and pimento liquid if needed to make mixture of spreading consistency.
(Err on the side of too much liquid; will "stiffen up" in the refrigerator.)
Beat egg whites until stiff and fold into cheese mixture.
Store, covered tightly in the refrigerator.
Will keep "forever."
