Continental Zucchini
Continental Zucchini is an moderately easy dinner. Made with 1 tbsp. cooking oil, 1 lb. zucchini, cubed (about 3 small), 1 to 2 garlic cloves, minced, 1 (2 oz.) jar chopped pimiento, drained and 1 (15 1/2 oz.) can whole kernel corn, drained, this recipe delivers authentic, satisfying flavors. Heat oil in a large skillet.
Saute zucchini and garlic for 3 to 4 minutes.
Add pimiento, corn, salt (if desired) and lemon pepper; cook and stir for 2 to 3 minutes or until zucchini is tender.
