Beat egg whites with cream of tartar until foamy.
Gradually beat in sugar and continue beating until very stiff and glossy. Fold in vanilla.
Turn 2 (8-inch) cake pans upside down.
Cover with brown paper.
Spread with meringue. Bake in 275Β° oven for 1 hour.
