Confetti Rice is an moderately easy dinner. Made with 1/2 lb. sliced bacon, diced, 1 c. long grain rice, cooked, 1 c. diced carrots, parboiled, 1 c. diced celery, parboiled and 1/2 c. fresh or frozen peas, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In large skillet, cook bacon until crisp.

Remove to paper towels; drain all but 3 tablespoons of the drippings.

Cook rice, carrots, celery and peas in drippings until heated through, about 5 to 7 minutes.

Stir in bacon.

Serve with soy sauce if desired. Makes 6 to 8 servings.
