Wash greens thoroughly (2 to 3 times) to remove sand.

Take out and discard tough stems.

Put ham hocks or ham chunks in pot.

Add greens and fill half full with water.

Let greens come to a boil, then turn fire down and simmer 2 1/2 to 3 hours or until seasoned and tender.

Add salt according to taste when serving.

Lift greens out of water into a flat bowl and cut into bite size pieces with a sharp knife.

We like to sprinkle pepper sauce or vinegar on our plates.
