Cold Salmon
Cold Salmon is an moderately easy dinner. Made with 2 lb. salmon, 4 hard-boiled eggs, 4 tomatoes, 1 c. cleaned shrimp and 2 heads lettuce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil salmon; skin and bone carefully.
Cool in stock.
Serve on a round platter on a bed of crisp lettuce leaves and sliced cucumbers.
Garnish with sliced eggs, tomatoes and parsley. Garnish with mayonnaise; sprinkle with fresh dill and shrimp. Serve extra mayonnaise.
Halibut or trout may be substituted for salmon.
