Colcannon
Colcannon is an moderately easy dinner. Made with 1 lb. cooked potatoes, mashed, 1 oz. butter or margarine, 1 oz. onion, chopped, 1/2 lb. cooked cabbage and salt and pepper, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Melt the butter; add onion and cover with a round of greased paper.
Put lid on saucepan and cook over a slow heat for 10 minutes, but do not allow to color.
Add the mashed potatoes, chopped cabbage, pepper, salt and milk.
Mix all together well and reheat thoroughly, stirring all the time.
Pile up in a hot vegetable dish.
Score with a fork.
