Colcannon
Colcannon is an moderately easy dinner. Made with 1 1/2 lb. potatoes, peeled, 1 1/2 c. milk, 6 scallions, 1 1/2 c. boiled green cabbage or curly kale and 1 tbsp. butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil the potatoes and mash.
Add milk and scallions (should be scalded to keep tops green) and beat until fluffy.
Toss the cooked cabbage (finely chopped) gently in the melted butter.
Add to the potatoes, together with parsley.
Fold well.
Salt and pepper to taste.
