Coconut Pie
Coconut Pie is an moderately easy dinner. Made with 1 stick margarine, melted, 1 (14 oz.) pkg. flaked coconut, 2 eggs, 1 tsp. cornstarch and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix together the sugar and cornstarch.
Add the eggs, margarine, 1 3/4 cups coconut, 1 1/4 cups of milk and vanilla. Stir well.
Pour mixture into pie shell(s).
Add additional milk and coconut (sprinkle over and gently mash down into mixture) to finish filling the shell(s) to 3/4-inch from the top.
Bake at 325Β° for 45 minutes or until golden brown.
