Coconut Macaroons is an easy dinner. Made with 1 egg white, beaten stiff, 1/2 c. sugar, 1/2 c. coconut, 1 c. cornflakes and 1/4 to 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drop from tip of spoon on greased cookie sheet.
Bake in 350Β° oven until golden brown.
(Keep back a small amount of coconut to sprinkle on top of macaroons before baking. I always double recipe.)
