Coconut Icing
Coconut Icing is an easy dinner. Made with 2 c. sugar, 1/2 stick butter, coconut milk and whole milk to equal 2 c., 2 c. grated fresh coconut and 4 egg whites, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix sugar, butter and milk.
Cook over medium heat until thick.
Add coconut and mix well. Beat egg whites until stiff. Add to rest of ingredients and cook until mixture starts popping. It will be watery, but put on cake anyway.
It's delicious when cool.
