Coconut Cake
Coconut Cake is an moderately easy dinner. Made with 2 c. sugar, 1 c. crisco, 1 c. sweet milk, 3 c. self-rising flour and 2 tsp. coconut extract, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cream Crisco and sugar; add egg yolks, milk and flour (with soda and baking powder).
Mix well and add coconut extract.
Fold in stiffly beaten egg whites.
Bake in 350Β° oven until done. Let stand for 10 minutes, then turn out on cooling racks.
Use coconut milk with 1 cup sugar, boiled together.
Add coconut and cool slightly; spread between layers.
Spread with Divinity Icing, top and sides.
Better made 2 days before serving.
