Coconut Cake is an easy dinner. Made with 1 box white cake mix, 1 (8 oz.) sour cream, 1 box powdered sugar and 12 oz. frozen shredded coconut, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In two layers per directions on box.
Cool; split in layers (I use long butcher knife).
Mix remaining ingredients.
Spread each layer with frosting stacking one at a time.
This icing is runny but it soaks in.
Put immediately in refrigerator.
Let set 2 days.
Can be frozen after 2 days, too.
