Coconut Cake
Coconut Cake is an moderately easy dinner. Made with 2/3 c. shortening, 1 1/2 c. sugar, 3 eggs, 1 tsp. vanilla and 2 3/4 c. sifted self-rising flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Grease and flour 2 (9-inch) pans.
Cream sugar and shortening. Add eggs, one at a time.
Cream thoroughly.
Add vanilla. Alternately add flour in 3 portions with milk in 2 portions; pour in pans.
Bake 25 to 30 minutes at 350Β°.
Allow to cool 10 minutes before removing from pans.
