Coconut Bread
Coconut Bread is an moderately easy dinner. Made with 3 c. flour, 2 tsp. baking powder, 1/2 tsp. salt, 1/2 tsp. baking soda and 2 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine flour, baking powder and salt; set aside.
In large bowl combine sugar, oil, eggs and extract.
Add dry ingredients alternately with buttermilk; stir just until moistened.
Fold in coconut and walnuts.
Pour into 2 greased and floured 8 1/2 by 4 1/2 inch loaf pans.
Bake at 325Β° for 1 hour or until bread tests done.
Cool 10 minutes in pans before removing to a wire rack to cool completely.
