Clam Chowder
Clam Chowder is an moderately easy dinner. Made with 1 pkg. chopped clams, 5 slices bacon, diced, 3/4 c. chopped onion, 1/2 c. chopped celery and water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Thaw and drain clams, reserving liquid.
Fry bacon until crisp. Remove bacon and drain.
Saute onion and celery in bacon fat.
Add water to reserved clam liquid to make 2 cups.
Add potatoes, water and clam liquid and seasonings to sauteed vegies.
Cover and simmer 15 minutes or until potatoes are tender.
Add clams, evaporated milk and bacon.
Heat through.
Sprinkle with chopped parsley flakes.
Yields 6 servings.
