Cinnamon-Sugared Walnuts

Heat walnuts for 5 minutes in an oven set at 375°. In a heavy saucepan, combine the sugar, water, cinnamon and salt.
Cook to 236° on a candy thermometer.
Remove from heat.
Beat by hand about 1 minute or until mixture begins to look creamy.
Add vanilla and warm nuts.
