Cinnamon Candy Pickles
Cinnamon Candy Pickles is an moderately easy dinner. Made with 15 large cucumbers (peel, core and cut in 1/2-inch thick long fingers), 2 c. lime, 1 c. vinegar, 1 1/2 oz. red food coloring and 3 c. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Add lime to 8 1/2 cups water.
Add cucumbers and soak 24 hours.
Rinse 3 times to remove lime and leave in ice water for 3 hours.
Drain.
Combine 1 cup vinegar, alum and food coloring. Add cucumbers and cover with water.
Simmer 1 hour.
While mixture is simmering, mix 3 cups vinegar, 3 cups water, 11 cups sugar, cinnamon sticks and red hots.
Boil until melted.
Pour over drained cucumbers and let stand 12 hours.
Heat to boiling.
Pack in jars and seal.
