Pour water into shallow bowl and sprinkle yeast and 1 teaspoon sugar over it.

Let stand 2 or 3 minutes; stir well.

Sit in unlighted oven for 5 minutes or until doubled.

Combine 3 cups of flour, then remaining 1/2 cup of sugar and the salt in a deep mixing bowl and make a well in the center.

Add the yeast mixture, egg yolks and milk with a large spoon.

Slowly mix together, then stir until smooth.

Place all of dough on floured board and knead, sprinkling flour over if necessary to make firm dough.

Knead 10 minutes.

Spread the tablespoon of butter inside a deep mixing bowl.

Place dough in bowl; turn over.

Drape with towel; let rise 1 hour or until doubled.
