Cinnamon-Apple Biscuits

Preheat oven to 475Β°.
In a large bowl, using a pastry blender or 2 knives, cut shortening into flour until mixture resembles coarse crumbs.
Do not overblend, overblending fat produces a mealy, rather than flaky tender biscuits.
Mix in apple, cinnamon, sugar and pecans.
Gently push mixture to edges of bowl, making a well in center.
Using a fork, blend in just enough milk so dough pulls away from sides of bowl.
Too much milk makes dough hard to handle; too little makes dry biscuits.
Do not overmix.
