In a saucepan bring 1 cup of apple cider to boiling.

Dissolve gelatin in boiling cider, stirring constantly.

Stir in remaining apple cider.

Chill until partially set (the consistency of unbeaten egg whites).

Fold in chopped apples, celery and pecans. Pour into a 3-cup mold or into 6 individual molds.

Chill until firm.

Unmold onto lettuce-lined plates.

Serve with mayonnaise or salad dressing.
