Chunky Potato Soup
Chunky Potato Soup is an moderately easy dinner. Made with 6 slices bacon, cut up, 1 large onion, chopped (1 c.), 2 stalks celery, chopped (1 c.), 1 (16 oz.) can whole potatoes, drained and coarsely chopped and 1 (10 3/4 oz.) can condensed chicken broth, this recipe delivers authentic, satisfying flavors. Fry bacon and drain.
Cook and stir onion and celery in 2 tablespoons of reserved bacon fat until tender, 6 minutes.
Stir in potatoes, broth, water, thyme and pepper.
