Heat the oven to 425°. Sprinkle the meat with salt and pepper.
Put in a roasting pan, fat side up.
Put in the oven.
Reduce the oven temperature to 350°. Roast until the meat is done, 2 hours for rare, 2 1/2 hours for medium rare.
Tent the roast with foil and let stand 10 minutes before carving.
