Christmas Date Cake
Christmas Date Cake is an moderately easy dinner. Made with 2 pkg. (1 lb.) dates, 3/4 lb. (1 1/2 jars) cherries, 1 lb. pecans, 1 c. sugar and 4 eggs, separated, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350Β°.
Place pan of water in bottom of oven. Chop and pecans; add cherries (candied cherries or maraschino is preferred).
Add vanilla and liquid (wine or grape juice can be substituted for whiskey) to fruit and nuts. Stir in sugar slightly beaten egg yolks.
Stir in dry ingredients and fold in beaten egg whites.
Batter will appear stiff and be mostly and nuts.
Decorate top with nuts and cherries. Bake cake at least 1 hour and 10 minutes.
