Christmas Chowder
Christmas Chowder is an moderately easy dinner. Made with 1/2 c. shredded carrots, 1/2 c. chopped celery, 1 (13 oz.) can chicken broth, 1/4 c. chopped onion and 1/4 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine carrots and celery in broth; cover and simmer until tender.
Cook onion, green pepper and butter until tender.
Blend in flour; add milk to this.
Cook, stirring constantly, until it comes to a boil and is thick.
Cook 2 minutes; add to broth mixture.
Reduce heat and stir in cheese.
Season to taste. Makes 6 small bowls.
