Christmas Cake
Christmas Cake is an moderately easy dinner. Made with 8 eggs, 2 c. sugar, 3 tbsp. vanilla, 1 tbsp. almond flavoring and 3 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Beat eggs sugar and continue beating until well mixed.
Vanilla and almond flavoring. Sift together flour, baking powder salt. Set aside.
Combine pecans, cherries, pineapple dates.
Sift flour mixture over this and mix well, then add eggs and sugar mixture.
Mix thoroughly. Pour into greased and floured cake pans.
Bake over a pan of water for 1 1/2 hours in a 250Β° oven.
Serve when cool. Like a fruit cake, portions should be kept small.
