Christmas Cake
Christmas Cake is an moderately easy dinner. Made with 1 lb. butter, 2 1/2 c. sugar, 3 fluid oz. pure lemon extract, 1 1/2 tsp. baking soda and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Bake at 300Β° for 1 1/2 hours to 2 hours.
Line angel food pan with brown paper.
Beat egg whites until stiff; set aside.
Cream butter and sugar, add soda, salt, half of sifted flour with lemon extract; beat until smooth.
Finish adding flour, mixing well. Take 1/2 cup flour and mix with raisins.
Fold pecans and raisins into mixture, then fold egg whites into mixture.
Pour into lined pan and bake.
This is a family tradition at our house.
