Chris' Chicken
Chris' Chicken is an moderately easy dinner. Made with 2 fresh, cut up chickens, 1 onion, diced, 1 red pepper, diced or pimento, 1 can green peas or 1 1/2 c. frozen peas and 3/4 c. olive oil, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In a large skillet, heat the olive oil and saute the chicken until light brown.
Add the onion, garlic and peppers.
Saute, but do not brown.
Push sauteed vegetables aside.
Add salt as desired. Add uncooked rice and stir among the chickens.
Add the chicken broth, tomato sauce, wine and peas and bring to a boil.
Remove from heat.
Cover and place in a hot oven at 400Β°.
Bake until dry. Serves 10 to 12.
