Chow-Chow
Chow-Chow is an moderately easy dinner. Made with 2 gal. green tomatoes, 8 large onions, chopped, 10 bell peppers, chopped, 3 tbsp. salt and 6 hot peppers, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Chop the tomatoes.
Mix tomatoes, onions and bell peppers and cover with salt.
Let stand overnight.
Drain.
Add hot peppers, sugar, vinegar and spices tied in cloth bag.
Boil until tender, about 15 minutes.
Remove spice bag. Pack tightly into clean hot pint jars. Adjust lids.
Process in boiling water bath for 5 minutes.
Yields 8 to 9 pints.
