Chow-Chow
Chow-Chow is an moderately easy dinner. Made with 1/2 c. salt, 4 qt. chopped green tomatoes, 2 qt. chopped cabbage, finely chopped, 2 c. chopped sweet red bell pepper and 2 c. chopped cucumbers, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sprinkle salt over vegetables; mix thoroughly.
Let stand 3 to 4 hours; drain thoroughly.
Press to remove liquid.
Add sugar and spices to vinegar and simmer for 15 minutes.
Add vegetables and heat to boiling.
Pack relish, boiling hot, into sterilized jars, leaving 1/8 inch headspace.
